Balsamic steak and gorgonzola pizza
Let's make it
Step 1
Preheat oven to 400°. Place shallots and steak on rimmed baking pan; stir shallots and rub steak with oil, and sprinkle with salt and pepper. Bake shallots 20 minutes or until lightly charred and tender, stirring occasionally; bake steak 9 minutes or until internal temperature reaches 135° for medium-rare. Transfer steak to cutting board and tent loosely with aluminum foil; let stand 10 minutes. (Internal temperature will rise to 145° upon standing.)
Step 2
Spray underside of rimmed baking pan with cooking spray. On lightly floured work surface, roll dough into 12-inch circle; carefully transfer dough to prepared pan. With fork, poke dough several times to vent.
Step 3
In small bowl, whisk vinegar and tomato paste until smooth. Leaving ½-inch border, spread vinegar mixture over dough; top with mozzarella cheese, spinach, Gorgonzola cheese and shallots. Bake pizza 18 minutes or until bottom of crust is golden brown and cheese melts, rotating pizza once.
Step 4
Thinly slice steak against the grain. Top pizza with steak; bake 2 minutes. Top pizza with tomatoes; cut into 8 slices.
