Baja cauliflower tacos

Step 1
Preheat oven to 400°. Line rimmed baking pan with parchment paper; spray with cooking spray. In shallow bowl, add flour. In second shallow bowl, whisk egg and 3 tablespoons water; place breadcrumbs in third shallow bowl. Dredge cauliflower in flour, then dip in egg and breadcrumbs, pressing so breadcrumbs adhere; place on prepared pan. Spray cauliflower with cooking spray; bake 25 minutes or until crisp.
Step 2
In medium bowl, toss cabbage, beans, onions, jalapeño, lime juice and salt; let stand 10 minutes. Makes about 2½ cups.
Step 3
Heat tortillas as label directs. Fill tortillas with cauliflower and cabbage mixture; drizzle with yum yum sauce and garnish with onions, if desired.
